The fragrant leaves of the thyme plant have a herbal, bitter and slightly sweet taste. Thyme is delicious in a variety of French and Mediterranean dishes, with vegetables such as aubergine, tomatoes, courgette and pumpkin, in soups and sauces, in marinades for meat, game and poultry, with chicken, pork and lamb and with roast potatoes.
Tip: thyme pairs particularly well with other Mediterranean herbs such as rosemary, bay leaf, oregano and sage.
