Sage has an intensely spicy fragrance and an earthy, slightly bitter taste. It is delicious in all kinds of Italian and Provençal dishes, with lamb and pork, oily fish and with beans and lentils. Sage has quite a strong flavour that can quickly overpower a dish, so use in moderation.
Tip: you can also use sage to make a herbal tea, adding lemon and honey if desired. Sage tea is particularly good for helping to soothe a soar throat.
