Black pepper, the unripe, dried berries of the pepper plant, is milder, spicier and more aromatic in flavour and fragrance than white pepper. Black pepper is a key seasoning in almost any dishes, adding just the right amount of spice. It is also perfect in marinades, stews, soups and sauces, as well as in Asian and North African spice blends. Freshly ground black pepper has a more intense in flavour than pre-ground pepper.

Tip: if you coarsely grind or crush the peppercorns, the pepper will be less spicy and more aromatic.
