The aromatic leaves of the bay tree add great flavour and aroma to marinades for meat and game, as well as to all kinds of sauces, stews, soups and broths. Bay is also delicious with chicken and fish, in sauerkraut and in a range of Mediterranean dishes.

Tip: add one or more bay leaves to a dish and let the flavours infuse during cooking. Combine with thyme and parsley in a bouquet garni or herb infuser and remove before serving
