Cakes or tarts with a liquid filling such as quiches or (non-bake) cheesecakes first need their pastry to be well baked before the liquid filling is added. This is called blind baking and this helps to ensure a dry and deliciously crispy base.

Place your dough in the mould, spread baking paper over it and cover with these ceramic baking beans. Bake your base/pastry until done, remove the baking beans and then add your filling. Bake further if necessary et voilà!
